Spread some tahini over your rice cake, on top add your pesto or smashed avocado. You can smash an avocado simply by scooping out avocado onto the rice cake and pressing it down with a fork.
You can add some sliced avocado to the toast now. Sprinkle a few cashews on top. Garnish with lemon rind, chives, and sea salt to your taste.
This is my take on the avocado toast craze (minus the toast, hence, noast). I eat bread on rare occasion and when I do, a loaf of organic sourdough is where it’s at. I like to find bakeries that are using non-GMO organic wheat which can be difficult but is possible. This brown rice cake is a great alternative and low on the glycemic index, meaning that it won’t spike your blood sugar levels too high.
As you can see with many of the recipes I’ve posted thus far, I value healthy food and low prep times. This is a very simple, yet delicious recipe that is great as an afternoon snack or even a light lunch.
